Introduction

Ingredients

    1/2 dry quinoa
    1 carrot, diced
    1 1/2 chopped onions
    2 chopped celery stalks
    1 ripe tomato, chopped
    4 1/2 oz. of extra lean ham, diced
    2.5 oz of crumbled feta cheese
    2 tbsp olive oil

Directions

Cook quinoa in rice cooker or on stove top adding 1 cup water to dry quinoa. Heat olive oil in frying pan or skillet. Add remaining ingredients except feta cheese. Cook until tender. Add cooked quinoa and feta cheese. Stir to combine.

Serving Size: Makes 2 servings, apprx 2 cups each
