Ingredients

    400g baby spinach Washed and dry
    1.5 c Cantaloupe cut in ½” Dice
    1 T balsamic vinegar
    1 t Dijon mustard
    1 t honey
    3 T extra virgin olive oil
    Salt and pepper to taste

Directions

Wash and dry the spinach. In a bowl mix vinegar, mustard, and honey. Whisk in the oil. Place spinach in a large bowl. Add Cantaloupe, and dressing. Toss to coat. Add salt and pepper to taste if you like.


Serving Size: Makes 4 meal size salads
