Oh wow. I love to make lasagna and tonight this one beat them all! This is the first time I ever tried whole wheat no-boil noodles and they were the moistest, tastiest noodles ever! Ingredients

    1 pkg. whole wheat organic pasta, such as delallo
    1 lb. Italian hot sausage
    1 egg
    15 oz. fat free ricotta cheese
    1/2 Cup parmesean and romano grated cheese mix
    1 tsp salt
    1/2 tsp pepper
    1 tsp crushed basil
    3 cups spinach
    1 1/2 jars of Trader Joes Basil Marinara sauce
    1/2 cup water


Directions

Remove sausage from casing and brown, crumbling. Set aside. In a seperate bowl mix ricotta cheese, parmesean/ romano mix, salt, pepper and basil together with the egg. In a large casserole dish put a little sauce on the bottom of the pan and begin to layer. Spread a thin layer of the ricotta mix on each noodle and layer with mozzarella, spinach, sauce and sausage. Do this three times, using up all of the ricotta, spinach and sausage. For the top layer sprinkle mozzarella, then sauce, then remaining mozzarella over the top. Add 1/2 cup water over the top and cover with foil.

Bake covered with foil at 350 for 40 minutes then uncover to let brown for 10 minutes. Let set 15 minutes and serve.
