I had to bake it nearly 50 minutes to get it done where knife came out clean.

Ingredients

Olive Oil Cooking Spray
2 tbsp pure maple syrup, plus additional for garnish
1 medium apple (I used granny smith)
2 cups Spelt Flour
1 tsp baking powder
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp fine sea salt
1/4 cup safflower oil
1/2 cup sucanat
1 egg
1/2 cup unsweetened applesauce
1 cup low-fat plain yogurt
2 tbsp fresh grated ginger
Directions
1. Preheat ove to 350. Mist an 8 inch round cake pan with cooking spray. Drizzle bottom of pan with maple syrup, swirling pan to coat bottom. Arrange apple slices in a single layer circle over top, allowing each slice to overlap slightly, until bottom is covered.
2. In medium bowl, combine flour, baking powder, baking soda, cinnamon and salt.
3. In large bowl, beat oil, sucanat, egg, applesauce, yogurt, and ginger with an electric hand mixer until smooth, 1-2 minutes. Add flour mixture and beat until just combined. Pour batter over top of apples and bake for 35-45 minutes or until a toothpick out clean when inserted in center. Let cool in pan on a wire rack for 10 minutes, then invert onto a serving platter.
