    1 Cup Apple Sauce
    1 1/2 lbs Sweet Potatoes (about 3, peeled and sliced 1" thick)
    3 Medium Onions (sliced and separated into rings)
    4 Medium Apples, Peeled and sliced
    2 lbs boneless center cut pork loin roast, trimmed of fat
    1 Tsp Dijon mustard
    1/4 Tsp black pepper
    1/4 Tsp dried sage
    1/4 cup cold water
    1 Tsp brown sugar
    pepper (to taste)
    2 Tbsp cornstarch


1. Pour the apple sauce into the crock pot. Layer the sweet potatoes, onions, and apples in crock pot.

2. In a nonstick skillet brown the pork on all sides and then place pork on top of the potato and apple slices.

3. Brush the mustard over the top of the pork and sprinkle the roast with the pepper (to taste) and the sage.

4. Cover and cook on low until the roast is done. Approximately 7-8 Hours.

5. Transfer the pork to a platter and keep it warm, use a slotted spoon and transfer the apple/sweet potato mixture to a bowl and keep warm.

6. Make Sauce: Combine water, brown sugar, and cornstarch in a measuring cup. Stir the cornstarch mixture into the juices in the crock pot and cook, stirring often until the sauce thickens, about 1-2 minutes. Serve it over the pork. Delicious!!!
