Ingredients

    4 eggs
    Skim milk
    Olive oil
    Light cheddar/marble cheese
    Mushroom
    Bell peppers (yellow and red used)
    Tomato
    Green onion (shallots)
    Table salt
    Black pepper
    Dill weed
    Pork Chop (left over from dinner...lol)

Directions

Heat up olive oil in pan on stove over low-medium heat. Chop all veggies and meat, add to warmed oil, cook. In a bowl, whisk eggs, milk, pepper, salt, and dill. Add to pan on stove. Cook with lid on pan, stirring occasionally. When fully cooked, add cheese to top and cover. Simmer until cheese is melted. Divide into 4 servings.
