Ingredients

    4-6 Medium potatoes
    4 Medium carrots
    1 onion
    1 celery rib
    1 1/2 tsp salt
    3/4 tsp thyme
    1/2 tsp pepper
    2 pounds boneless, skinless chicken breast, cubed
    2 large apples, any variety but Granny Smith works well
    1 1/4 cups apple cider
    1 TBS cider vinegar
    1 bay leaf

Directions

Just dump all vegetables and chicken chunks into crockpot. You could brown chicken if you want to. I make it both ways and it's great either way. Place the apples on the top, preferably in small cubes so they will disintegrate during cooking and become part of the "sauce." Then pour over the cider and cider vinegar with the spices and set on low and cook all day, or about 4-5 hours on high.
