Ingredients

    6 Boneless Skinless Chicken Breasts
    3 c. chopped onion
    1 TLBSP olive oil
    2 tsp chili powder
    2 tsp crushed garlic
    1 oz. lemon juice
    45 oz. Chicken Broth
    3 c. Chunky Salsa
    3 c. Corn (frozen or canned)

Directions

Cut chicken into bite sized pieces and saute chicken, onion and garlic in the olive oil for 5 minutes. Add broth, corn, chili powder, lemon juice and salsa. Simmer for 1 hour. Serve with crushed tortilla chips, shredded cheddar and sour cream if desired.
