Introduction

Green bean casserole is my favorite side dish on Thanksgiving. This year, I tried to lighten it up a bit with greek yogurt rather than sour cream, smart balance rather than butter, and splenda rather than sugar.

You can also sub canned or fresh green beans for frozen, and crushed corn flakes or bran cereal for the panko bread crumbs. If using fresh or frozen green beans, I recommend sauteing them first to ensure they cook through properly.

Ingredients

    * 1 bag frozen green beans (32 oz, or approximately 7 1/2 cups) or 2 cans green beans

    * 8 ounces shredded mozzarella cheese

    * 2 tablespoons smart balance

    * 2 tablespoons flour

    * 2 teaspoons grated onion

    * 1 teaspoon salt (or 2 tsp kosher salt)

    * 1/4 teaspoon pepper

    * 1 teaspoon Splenda

    * 1 cup plain greek yogurt

    * 1 cup panko bread crumbs, tossed with a few teaspoons of smart balance

Directions

In a saucepan over medium-low heat, melt smart balance. Add onion and cook for about 30 seconds. Stir in flour, salt, pepper, and splenda; blend well and continue cooking and stirring until bubbly. Stir in yogurt and cook over low heat for about 1 minute.

If desired, in a separate saucepan, saute beans to cook through.

Spread beans over the bottom of a buttered (with smart balance, butter, or whatever you have handy) casserole dish (11x7x2-inch baking dish or similar size). Sprinkle shredded cheese over green beans then pour sauce evenly over; top with buttered bread crumbs. Bake green bean casserole at 400° for 20 minutes. (Cooking time may be increased if beans were not sauted prior to adding to casserole dish.)

Serving Size: Makes about 20 1/2 cup servings
