Ingredients

    4 (4 oz.) tilapia loins or fillets
    2 T. Smart Balance spread, melted
    salt and pepper to taste
    garlic powder to taste
    dried basil to taste
    3-4 roma/plum tomatoes, chopped
    3/4 c. white wine (I use Chardonnay)
    optional - grated parmesan for garnishing

Directions

Preheat oven to 425 degrees.
Place the tilapia on a large sheet of heavy-duty aluminum foil that's been lightly sprayed with olive oil. Bend up sides of foil, as you will be making a pouch.
Pour butter evenly over tilapia. Sprinkle with salt and pepper, garlic powder, and basil. Top with chopped tomatoes. Pour wine over fish.
Fold aluminum foil into a pouch and place on baking sheet.
Cook at 425 degrees for 20-25 minutes. Open pouch carefully to avoid steam burns.
