Ingredients

    1 1/2 cups all purpose flour
    3/4 cup sugar
    1/2 teaspoon salt
    2 teaspoons baking powder
    1/3 cup vegetable oil ( I use canola)
    1 large egg
    1/3 cup milk
    1 cup fresh blueberries (frozen can be used)

    For Topping
    1/2 cup white sugar
    1/3 cup all purpose flour
    1/4 cup butter cubed
    1 and 1/2 teaspoons ground cinnamon

Directions

Preheat oven to 400 degrees and grease muffin cups or line with muffin liners ( You can use cupcake holders)

Combine 1 and 1/2 cups flour, 3/4 cup sugar, salt and baking powder. Place oil into a 1 cup measuring cup, add the egg and enough milk to fill the cup. MIx this with the flour mixture. Fold in the blueberries. Fill muffin cups right to the top and sprking with crumb topping mixture.

To Make Crumb Topping:
Mix together 1/2 cup sugar, 1/3 cup flour, 1/4 cup butter and 1 and 1/2 teaspoons cinnamon. Mix with fork and sprinkle over muffins before baking.

Bake for 20 - 25 minutes.

    Incredible!
    I found this recipe on Allrecipes and made it tonight....they ARE 'to die for'!! Sure, they are NOT low fat or low calorie, BUT with some substitutions, using this as the base, I think this is still a very worthy recipe. YUM! - 3/12/11

    this is a great muffin recipe and can be tweaked to make "healthier" which is what i did, but i've also had a friend make the full calorie count version - both are AMAZING! plus, not all recipes have to be completely healthy via sparkrecipes - moderation :) - 7/8/10

    This is not a diet food. It's high calorie, high fat, low fiber and low protein. Maybe you should search for another blueberry muffin recipe on Spark Recipe that will be healthier. I'm sure these are to die for, but the secret is to find a recipe that is delisious and healthy. - 8/13/08
