Introduction

These are chewy granola-ish bars without the granola and are a great way to use up old bananas. I also make them with plain greek yogurt, but not adding it allows me to use these unrefrigerated if need be. Ingredients

    3 medium bananas on the verge of being too ripe
    2/3 cups chopped dates (or raisons, or whatever else you want)
    1 cup old fashioned oatmeal
    3 tsp splenda
    3 tsp cinnamon
    1 small fresh apple (preferably a slightly tart one)
    1/2 cup fiber one (totally optional)
    Splash of vanilla extract

    You can also use applesauce or yogurt with this and have it turn out even better--it's modified from a recipe that used vegetable oil and flour. Substitute ingredients like mad if you want. . .I just use what I have at hand. I've tried chocolate chips in it, but didn't really like it. Any dried fruit is pretty yummy, and combinations like dates and apricots or dates and raisons are very good.

Directions

mix the cinnamon and splenda and set aside
finely chop apple and roughly chop dates and set aside
Preheat oven to 350 degrees
pour all but 1/4 cup of the fiber one cereal and oatmeal together in a food processor and grind into a rough flour-ish consistency.
Pour into a mixing bowl and add soft bananas
mash bananas into the oat/fiber one mix and blend unto a dough consistency
Sprinkle in vanilla extract to taste.
Add remaining 1/4 cup of fiber one/oats that are unground.
Mix in apple and dates.
Use nonstick cooking spray to grease a baking pan.
Bake for 15 minutes
Take out of oven and score with a sharp knife along lines to make bars.
Return to the oven for another 15-25 minutes (depending on how hot your oven runs.
Let cool then separate.


Serving Size: makes 9-12 very small bars
