Ingredients

    1 1/2 pounds round beef steak, cubed (stew beef)
    1 Large Carrot, sliced
    1 Large Onion, chopped
    1 Medium Green Pepper (Bell Pepper), chopped
    1/2 teaspoon salt
    1/2 teaspoon black pepper
    1 tablespoon flour
    1 1/2 tablespoons paprika
    1 tablespoon tomato paste
    1/2 teaspoon caraway seeds
    1 clove garlic, minced
    1 teaspoon sugar
    6 cups uncooked Egg Noodles (computed with No Yolk Broad Noodles)
    1/2 cup reduced fat sour cream

Directions

Place onion, carrot & bell pepper in bottom of slow cooker.

In a large skillet, brown cubed beef in olive oil. Transfer to slow cooker.

Add beef broth to the skillet, stirring to loosen bits from pan. Combine flour, paprika, tomato paste, caraway seeds, minced garlic, sugar, salt and pepper & stir into the skillet. Bring to a boil. Cook & stir for 2 minutes our until thickened.

Pour over meat in slow cooker. Cover & cook on low for 7 - 9 hous or until meat is tender. Stir sour cream into slow cooker 30 - 45 minutes before serving to allow flavors to blend.

Cook Egg Noodles per package directions & drain. Serve goulash on top of 3/4 cup of Egg Noodles.

Good paired with a simple green salad & fresh crusty bread.

Serving Size: Makes 6 servings of 2/3 Cup Goulash with 3/4 cup egg noodles.
