Introduction

Ingredients

    1 spagetti squash, raw, cut in half lengthwize and deseeded
    Garlic crutons, 2 servings
    1 cup of meatless spagetti sauce
    2 Tbs Parmesan Cheese, grated
    1/2 Cup diced tomotes with basil and garlic
    2 oz of mozzarella cheese

Directions

cut a small/ medium spagetti squash in half length wise, scoop out seeds. Place upside down in microwave safe dish, put an inch of water in dish and cover it with plastic wrap. Cook on high for 12 minutes. Mix sauce with tomatoes and warm them in microwave oven for 2 minutes after squash is done. Fill squash halves with a little sauce, add crutons then finish filling with the sauce. Top with cheese. Broil in oven until cheese is bubbly and slightly browned. Enjoy!
