Introduction

A quick, light breakfast. A quick, light breakfast.
Number of Servings: 6

Ingredients

    6 slices deli ham (round)
    1/2 cup leaves fresh spinach
    6 large eggs
    1/4 c. shredded cheese
    Salt to taste
    Pepper to taste

Directions

Heat oven to 400 degrees.

Spray muffin tin with cooking spray. Place 1 piece of ham in the bottom of each cup. Place 3-4 leaves of spinach in each cup. Crack egg in small bowl and pour on top of ham and spinach. Salt & pepper to taste.

Place in oven and bake approx. 12 minutes for runny yolks; 14 for solid yolks. Remove from oven and immediately sprinkle with cheese.

Serve.

    Love this. Made with ham once and without (because I was out). Either way, Delicious! This is a keeper recipe for my family. Even the kids loved it (they thought is was broccoli, which they love) - 1/3/14

    I'll definitely make these again! We enjoyed them and they were quite hearty. I did use much more spinach and had the deli slice the ham extra thin so it didn't overpower the other flavors. Excellent! - 10/18/11
