Introduction
These are dairy free muffin I made for my kids. I ground the oatmeal and pureed all the fruits to make the flavors and textures more uniform and give the muffins an interesting color for my kids. Ingredients

1 cup oatmeal, ground fine you can do this in a food processer or even a blender
1 1/2 cup whole wheat flour
2 tps baking powder
1/4 cup brown sugar
1/4 cup granulated sugar
1 egg
1 tps vanilla
3 Tbs oil
1 Cup Almond milk
1 1/2 tps ground cinnamon
2 cups fruit pureed, our favorites are apple and banana, mixed berries and even pumpkin
Directions
Pre heat oven to 350 degrees
Mix together oatmeal,flour,baking powder, sugars and cinnamon.
In a small bowl mix the almond milk, egg, vanilla and oil. Add to the flour mixture and blend well. Fold in the pureed fruit. Once all ingredients are mixed well pour in to 18 greased or lined muffin tins.
Bake for 20-30 min, until a toothpick inserted it to the center of a muffin comes out clean
Serving Size: Makes 18 regular sized muffins
