Ingredients

    Pumpkin, canned, without salt, 2 cup
    Canned Tomatoes, 1 can
    Beans, black, 2/3 cup
    Beans, red kidney, 2/3 cup
    Chickpeas (garbanzo beans), 2/3cup
    Onions, raw, 1 cup, chopped
    Peppers (green), 1/2 cup, chopped
    Peppers (orange/yellow/red) 1/2 cup, chopped
    Garlic, 1 clove
    Summer squash, .5 medium
    Chili powder, 1.5 tbsp
    Pepper, black, 1 tsp
    Salt, 1 dash
    Cheddar Cheese, shredded
    Sour Cream

Directions

On medium skillet, sautee garlic, onion and peppers. Add mixture to slow cooker and mix in beans (canned or previously soaked), pumpkin puree, spices, and squash. Cook on low heat approx. 4-5 hours. Top with cheddar cheese and sour cream.

Serving Size: Makes 4 1-cup servings
