Introduction

Very good soup with crusty bread on a cold day. Easy to make and keeps fairly well. I use Fit & Active (Aldi brand) chicken broth reduced sodium for the liquid. Ingredients

    1 medium head of cabbage, chopped
    6 cloves garlic, chopped
    2 medium/small zuccini, sliced thin
    2 medium carrots, chopped
    2 stalks celer, sliced thin
    2 onions, chopped fine
    2 medium tomatoes, chopped
    l lg chicken breast, chopped (Optional)
    8 cups water or chicken stock/broth (I use broth)
    2 bay leaves
    1/2 tsp cayenne pepper
    salt & pepper to taste

Directions

Chop all vegetables (and chicken if adding). combine with spices and broth in large dutch oven. Let simmer til vegetables are tender. Serve with a warm crusty bread.

Serving Size: makes approximately 8 1-cup servings.
