    500g chicken fillet, chopped
    1 egg yolk
    1 tblspoon corn flour
    1 tblspoon soy sauce
    1 garlic clove crushed

    1 small tin pineapple pieces, drained
    1 medium red capsicum, sliced
    1 medium zucchini, sliced

    3 tblspoons pineapple juice
    3 tblspoones sugar
    3 tblspoons vinegar
    3 tblspoons tomato sauce
    1 teaspoon corn flour


Mix chicken, egg yolk, soy sauce and corn flour in a bowl. Cover and refrigerate for 30 minutes.
Spray wok with Canola Spray and heat on medium high. Stir fry chicken til golden brown and nearly cooked through. Add pineapple pieces and vegetables, stir fry 2-3 minutes. Combine juice, sugar, vinegar, sauce and flour in a small jug, mix well. Add to meat and vegetables, bring to the boil and simmer until thickened. Serve with rice.
