Introduction
Not quite chicken parmesan, but certainly tasty. Not quite chicken parmesan, but certainly tasty.Number of Servings: 4
Ingredients

4 boneless, skinless chicken breasts
1 large green bell pepper, cut into strips
3/4 medium (or 1/2 large) sweet yellow onion, diced
1 cup fresh sliced mushrooms
other veggies if desired
1 large can (about 24 oz.) tomato sauce... (or PLAIN spaghetti sauce)
1 tbsp basil
1 tbsp oregano
3 tsp minced dried garlic
1 tsp cinammon
3 tbsp sugar
1/2 c. parmesan cheese (approx.)
1 tbsp or so of oil (I use olive)
1 tbsp or so of butter (I use Blue Bonnet Light Margarine)
Directions
1. Preheat oven to 375. Put a large skillet on medium heat.
2. Add all veggies to skillet with JUST ENOUGH oil that they don't stick. Saute until the onions go clear and the peppers are tender.
3. Add tomato sauce and reduce the heat a little bit. Let it warm through, add all your spices, and allow it to simmer while stirring slowly.
4. Meanwhile, get out a glass baking dish and butter with JUST ENOUGH to coat the inside of the dish. Arrange raw chicken breasts on the bottom of the pan so that they don't overlap (much).
5. Pour the warm sauce over the chicken in the pan. Sprinkle a LITTLE parmesan cheese on top (not too much or it'll burn). Place in oven for 20-25 minutes, or until chicken is no longer pink in the middle.
