Ingredients

    3 c flour
    1 c sugar
    2 t baking powder
    1 t baking soda
    1 t cinnamon
    4 T chilled butter, cut into small pieces
    ½ c chopped pecans
    ½ c chopped dried apricots
    2 large ripe bananas, peeled and mashed
    1 c clabbered soymilk
    2 egg sub

Directions

Heat oven to 350. Spray loaf pan. Combine dry ingred in a large bowl. Using a pastry blender, work in the butter into the dry ingred. Mix in the pecans and apricots. Stir in the bananas, soymilk and egg sub until well blended. Pour into pan and bake 1 hour. Use toothpick test. Turn onto wire rack.
