Ingredients

    Citrus Tilapia Marinate:

    • 1/4 cup orange juice (Tip: keep frozen concentrate handy to make small amounts of orange juice)
    • 2 tablespoons olive oil
    • 1 teaspoons thyme leaves or crushed, or ½ teaspoon ground
    • 1 tablespoon Splenda brown sugar
    • 1 teaspoon Mrs. Dash Fiesta Lime

    Orange Relish:

    • 1/2 teaspoon grated orange peel
    • 2 seedless oranges, peeled, sectioned and cut into 1/2-inch pieces
    • 2 tablespoons chopped red bell pepper
    • 1 tablespoon Splenda Brown Sugar
    • 1 tablespoon Splenda
    • 2 tablespoons finely chopped red onion
    • 1 tablespoon chopped fresh or dried parsley
    • 1/2 teaspoon ground ginger
    • 1/2 teaspoon thyme leaves or crushed, or ½

Directions

1. Marinate 4 tilapia fillets (about 1 pound), mix ingredients in small bowl. Place tilapia in re-sealable plastic bag or glass dish. Add marinade; turn to coat well. Refrigerate 30 minutes or longer for extra flavor.
2. For the Relish, mix all ingredients in medium bowl. Cover. Refrigerate until ready to serve.
3. Prepare fish for the oven: Place 1 tablespoon of olive oil to coat the bottom of a glass baking dish. Place marinated fish in the dish (discard marinate). Sprinkle fish with Splenda brown sugar, Mrs. Dash Fiesta Lime.
4. Bake, 400°F for 17 to 19 minutes
5. Serve immediately, spooning relish over ½ of fish. The above was served with steamed white rice and asparagus simmered in olive oil until done.
