Ingredients

    3 cups baby carrots
    1 tablespoon lemon juice
    1 tablespoon light margarine
    3 tablespoons frozen apple juice concentrate
    1 cup chicken broth, , fat-free, salt-free
    1 teaspoon ground cinnamon
    2 teaspoons cornstarch
    1 teaspoon water

Directions

1. Steam the carrots, covered, for 3 minutes.

2. Sprinkle with lemon juice.

3. Melt the margarine in a medium skillet using medium heat.

4. Add the apple juice concentrate and heat until it melts.

5. Add the broth and cinnamon and bring to a boil.

6. Mix the cornstarch and the water together

7. Add to the skillet, lower the heat, and cook until the ingredients are thickened. Add the carrots and toss well to coat.

    Very Good
    Very tasty, but the carrots need to be steamed longer; more like 15 minutes. I prefer carrots cooked, not crunchy. The glaze is good. - 1/1/08
