Ingredients

1/2 cup pearl barley
2 cups boiling chicken stock, or as needed
1 pounds pork tenderloin, cut into 1-inch cubes
2 boiling potatoes, cut into 1-inch cubes
2 tart apples
1 onions, sliced
2 tbsp olive oil
1/2 tbsp sugar
1 tsp cider vinegar
salt and pepper TT
Directions
Put the barley in a deep saucepan, cover with chicken stock, and simmer gently for 30 to 45 minutes. Add pork and cook at a bare simmer for 5 minutes. Add potatoes ( and more water or stock if needed), cover pot, and simmer for 10 minutes. Core apples (but do not peel) and cut into chunks, add to pot, and cook 5 minutes more. Meanwhile saute the onions in the olive oil and sugar in a skillet until browned. Add the vinegar, stir the mixture into the pork pot, and season to taste.
