This soup is a nutritarian recipe I put together that is using all plant based ingredients. It is chalk full of nutrients and vitamins. It also is a good source of protein and low on fat. Ingredients


    Ginger Root 1 TBSP
    Garlic 3-4 cloves minced
    Cayenne Pepper spice 1 tsp.
    Dried split peas 1.5 cups
    Arugula 1 cup chopped
    Spinach 1 cup chopped
    Broccoli fresh 2 cups chopped
    Cilantro 2 Tbsp in Soup and mor for a garnish
    Curry Powder
    Sweetener of choice to taste
    Salt free salt to taste
    Onions I cup chopped
    Peanut butter .25 cups 1/4c.

Directions

rinse the split peas well in warm water. Mince the garlic, Rosemary and ginger. Chop onion, spinach, arugula, broccoli and cilantro. Put all the vegetable and spices into a pot with 3-4 cups of water. Boil and let simmer until vegetables are well cooked. Put all of the ingredients in a blender and blend until it is very smooth.
(Optional) you can add some blackbeans in the soup ater blending...it gives the soup a great texture. Garnish with cilantro and a red tomato
