Number of Servings: 6

Ingredients

    4 Medium Russet potatoes, diced
    1/2 Large onion, diced
    Seasonings (any you like)...we use garlic and red pepper flakes, salt and black pepper
    2 Tbsp canola Oil
    3 Tbsp Butter

Directions

Heat oil in pan, add potatoes and cover for 3-5 minutes to begin to soften/cook potatoes. Uncover, add butter, melt and toss potatoes to coat all sides. Add seasonings. Let potatoes cook for 5-7 minutes per side to brown..withOUT touching them! After the first flip add the onions and continue cooking until onions and potatoes are browned!
