Ingredients

1 cup roma tomatos, seeded
2 tbsp basil chopped
2 tbsp shallots, chopped
garlic powder to taste
2 tsp evoo
1 tsp lemon juice
salt and pepper to taste
1 cup loosely packed spinach leaves
2 (8 oz) salmon fillets, skin removed
Directions
Preheat oven to 375
Mix first 7 ingredients in a bowl, and set aside
place half of spinach leaves on a 10"X15" piece of aluminum foil
lay on one piece of fillet and spoon over tomato basil mixture.
fold foil over and seal the edges
Repeat with other salmon fillet.
Bake packets in a 375 oven for 20 to 30 minutes, or until fish is opaque in the center
Serving Size: makes 2 fillets
