Ingredients

1.5 cup cabbage, chopped thin
1 cup grated carrot (about 3 large carrots)
.5 cup grated raw beet (about half a beet)
.5 cup chopped broccoli florets
1 cup celery, sliced medium thin
.5 cup raisins (a handful)
2-3 tablespoons apple cider vinegar
Fresh ground black pepper to taste
Directions
Chop all the ingredients into a bowl. Grind black pepper and douse with apple cider vinegar. Stir to combine.
Slaw is best when you let it sit an hour or two so the ingredients can make friends! The vinegar helps release the sugar from the beets and raisins, and the whole thing turns bright pink.
