Ingredients

4 anchovies
Garlic, 4 clove
Egg, fresh, cage free, organic, 2 large
*Extra Virgin Olive Oil, 1/2 cup
Cider Vinegar, 2 tsp
*Lemon Juice, 2 tsp
lemon zest, 2 Tablespoons
dash of Worcestershire sauce
salt and pepper to taste
Parmesan Cheese, grated, 1/4 cup + 2 Tbsp.
Gruyere Cheese, 4 oz (1-oz each cut into 1 inch pieces)
Romaine Lettuce, 4 cups, shredded
Directions
Muddle the anchovies and garlic to make a paste in a wooden bowl. Break the eggs into the bowl. Beat the eggs with a wire whisk. When the mixture is smooth, add enough olive oil, a little at a time, whisking constantly, until the dressing is creamy. Whisk in the vinegar, lemon juice, and lemon zest. Add a dash of Worcestershire sauce and 1/4 cup of parmasean. Season with salt and pepper.
To make croutons, put Gruyere pieces on freezer paper and cook in microwave for about 30 seconds or until they are crisp. Toss romaine with salad dressing. Correct seasoning. Top with remaining Parmesan and Gruyere croutons.
