    2 cups parsnips shredded
    1.5 cups butternut squash shredded
    1 cup carrots shredded
    1 T white balsamic vinegar or to taste
    pepper

Directions

Combine all shredded root veggies and toss with vinegar and pepper. Any root veggie may be substituted.
