Number of Servings: 8

Ingredients

    1 can (49.5 oz) chicken broth
    1 can (14.5 oz) crushed tomatoes, undrained
    1 can (14.5 oz) diced tomatoes, undrained
    1 pound boneless sinless chicken breasts, cut into 1/2 inch cubes
    1 lg onion, chopped
    1/3 cup minced fresh cilantro
    1 can (4 oz) chopped green chilies
    1 garlic clove, minced
    1 teaspoon chili powder
    1 teaspoon ground cumin
    1/2 teaspoon dried oregano
    1/4 teaspoon cayenne pepper
    3 cups frozen corn, thawed

Directions

In a large saucepan, combine the first 12 ingredients (everything but the corn). Bring to a boil. Reduce heat, cover and simmer for 1 hour. Add corn, cook 10 minutes longer. If you want, serve with tortilla chips and cheese (those not accounted for in calorie count)
