Introduction
I make these Breakfast Burritos ahead of time, wrap individually in plastic wrap, and then freeze them for up to 3 months. When I know my morning will be busy and I need a quick on the go breakfast, I pull out a burrito to thaw in the fridge overnight and then remove the burrito from plastic wrap and put in a paper towel in the microwave for 30 - 60 seconds. Ingredients

2 eggs
1 cup egg substitute
2 Tbsp 1% milk
1/4 tsp pepper
3/4 cup diced extra lean ham
1 cup fat free shredded cheddar cheese
6 whole wheat tortillas
Directions
Whisk together eggs, egg substitute, milk, and pepper. Cook over medium heat until done.
Add ham and cheddar cheese.
Scoop egg mixture onto middle of each tortilla and roll up.
Serve immediately or freeze individually for up to 3 months.
