Ingredients

    2 bonelss, skinless chicken breasts cut into 1-inch chunks (about 2 lbs)
    3 medium sweet potatoes, peeled and chopped into 1-inch cubes
    3/4 Cup creamy peanut butter
    2 14.5 oz. cans of diced tomatoes, undrained (I use fire roasted)
    1.5 Cup chicken broth
    1 TBS dried minced onions
    1 tsp ground Ginger
    1 6 oz can tomato paste
    2 tsp curry powder
    1 tsp red pepper flakes
    1/2 tsp Kosher salt

Directions

Use a 6-quart slow cooker. Put the chicken into the bottom of the slow cooker. Add the sweet potatoes, peanut butter, diced tomatoes and broth. Add the dried onion and all of the spices. Don't worry about stirring now, the peanut butter will make it difficult. Cover and cook on low for 6-8 hours or on high for 4-5 hours. Stir well before serving.
