Introduction
A mix of bison and ground turkey make these meatballs beautiful, flavorful, delicious and light. Ground-up corn taco shells and eggs provide a gluten-free binder. Ingredients

3 Taco Shells,
12 oz. Ground bison (buffalo),
24 oz. Ground Turkey,
2 tsp Penzeys Italian Sausage seasoning,
0.25 tsp Garlic powder
2 large Eggs
0.25 tsp Salt (more or less, to taste)
Directions
Preheat oven to 400 F (204 C). Grind taco shells in a dry blender. Place in a large bowl. Swirl the eggs, seasonings and crushed taco shells in a large bowl. Add meats to bowl, and use fingers to lightly mix all ingredients (don't compact or mash the meat). Combine thoroughly.
Use a small scoop (1 TB) to quickly portion petite meatballs, and evenly space on a baking sheet. (I used 2 small baking sheets) Bake at 400F/204C for 25-30 minutes.
Enjoy with marinara sauce, ketchup, or your favorite barbecue sauce. (Or, pair with pasta or a toasted sandwich roll and mozzarella)
Serving Size: Makes 72-75 small meatballs (6 @ serving)
