Introduction

Number of Servings: 12

Ingredients

    3 very ripe bananas, mashed
    1/2 c. granulated sugar
    1/4 c. brown sugar
    1 EnerG Egg Replacer (1 1/2 tsp mixed with 2 Tbsp water)
    1/3 c margarine, melted
    1/2 tsp lemon extract (opt)
    1 1/2 c flour
    1 tsp baking soda
    1 tsp baking powder
    1/4 tsp salt
    1 tsp cinnamon

Directions

Mix bananas, sugars, prepared egg replacer, and melted margarine until blended well. Add Lemon extract. In a separate bowl, prepare dry ingredients together. Add mixed dry ingredients slowly, until all ingredients are combined. Batter will be lumpy.
Fill each lined (or sprayed) muffin tins 2/3 full. Bake at a Preheated 350'F oven for 15-25 minutes (10-18 minutes for mini-muffins).

Serving Size: makes 12 muffins, or 24 mini muffins
