Ingredients

12 oz bag of scallops (frozen)
12 oz bag of shrimp (frozen)
1/2 cup water
2 green onions/shallots finely chopped
2 Tbsp butter
1/4 cup flour
1 1/2 cups fat free half & half
1 egg yolk
pinch of nutmeg
pinch of cayenne pepper
5 slices wheat toast
Directions
simmer shrimp & scallops in 1/2 cup water in med. sauce pan covered till cooked (3-5 minutes), drain reserve 1/2 cup of the liquid.
Saute onions in butter in fry pan till tender (1-2 min). Mix in flour, cook 1 minute. Whisk in half & half, reserved cooking liquid from shrimp/scallops, heat to boiling whisking constantly for 1 minute. Take egg yolk in bowl and add about a cup of cokking mixture to it, whisk together and then add back to dry pan, whisking well over low heat.
Take tails off shrimp if on, cut scallops into half pieces, add this and nutmeg, cayenne to mixture. Heat thru well, make toast, add one scoop over diaganolly cut toast. May sprinkle with parsley...
This made 5 nice sized servings, serve with one piece of toast...yummy! I like spice so I added a tish more cayenne that directed.
