Number of Servings: 12

Ingredients

    1 TB flaxseed + 3 TB water
    3/4 water
    2 cups self-raising flour
    1/2 teaspoon salt
    50 grams low-fat feta cheese, crumbled or cut into 1cm cubes
    1 cup of finely chopped baby spinach
    1/2 cup low-fat grated cheese

Directions

Preheat oven to 370 F. Grease a 12 cup muffin tin or line with patty cases and spray with cooking oil.
Mix all ingredients together. It will be very solid.
Bake for 30 minutes or until muffins are golden. Makes 12.
