Ingredients

    *Whole Wheat Flour, 1 cup
    Milk, 2%, .75 cup
    Egg, fresh, 1 large
    Baking Powder, 3 tsp
    Salt, .25 tsp
    Nutmeg, ground, 1 tsp
    *Canola Oil, 3 tbsp
    Banana, fresh, 2 small
    Mixed Nuts, dry roasted, .5 cup
    Brown Sugar, .25 cup, packed

Tips

Can substitute packed brown sugar with amber agave nectar.
Can substitute canola oil with applesauce.
Reduce nuts and banana for a smoother batter.


Directions

Mix dry ingredients in a bowl, add wet ingredients and stir, then add chopped banana and crushed nuts, stir to combine. Cook on griddle or non-stick pan over medium heat. Each pancake equals 1/3 cup of batter. Batter is thick! Spread batter into a circle after adding to the pan.
