Ingredients

8 Whole eggs
16 Egg whites
1/2 cup chopped onion
1/2 cup chopped green pepper
1/2 cup Fat Free Cottage cheese
5 slices turkey bacon
1 wedge Weight Watchers white cheddar
(similar to laughing cow)

Tips
You can customize this recipe with different meats and vegetables. You can make this on Sunday and have breakfast for the whole week. Wrap individual servings and microwave to reheat.
Directions
Preheat oven to 350
Microwave turkey bacon until crisp, turning over halfway, about 2 minutes.
Chop peppers and onions, or any vegetables you have on hand.
In a large bowl whisk together eggs and whites, add cottage cheese and combine.
Spray 8x8 glass dish with Pam.
Pour egg mixture into dish, add remaining ingredients, add salt and pepper to taste.
Bake until the middle is just set, about 45 minutes.
Cut into 8 servings.
Serving Size: 1/8 whole

It turned out well &now I have a breakfast ready for the week. I added red pepper flakes, and I used 7 slices of bacon to finish the package and Mexican shredded cheese. I like you can always change it to get a different mixture. I think next time I'll add more veggies variation like some mushrooms - 12/21/13
