Ingredients

    2 Skinned and boned Chicken Breast
    1 Chopped Onion
    1 Chopped Sweet Red Pepper
    1 punnet of Baby Tomato Chopped
    1 Garlic Clove Crushed
    1tbsp fresh Basil
    2 Cups Wild Rice

Directions

Place the chicken breast in a shallow oven dish, finely chop the onions, peppers and tomatos. Crush the garlic and add all of these ingredients to the chicken add 1 tblsp Fresh Basil and cover the dish with tin foil place into a pre-heated oven Gas Mark 4 or 160 electric and bake for appros 30-40 mins. Cook the wild rice according to packet . Serve and Enjoy ( serves 2)
