Introduction

One of my family's favorites in which I've reduced the fat (using an olive oil based mayo), reduced the carbs and sugar (using a no calorie granulated sweetener.)
low calorie (230 cals per cup), low carb (7 net carbs per cup), sugar free, reduced fat (17 g fat per cup vs. 28.5 using regular mayo)

Ingredients

    4 cups fresh broccoli florets
    4 cups fresh cauliflower florets
    1 medium sweet onion coarsely chopped (about 1/2 cup)
    2 cups shredded cheddar cheese
    1 cup crispy cooked crumbled bacon
    1 1/3 cups olive oil mayo
    1/3 cup red wine vinegar
    6 tbsps granulated no calorie sweetener

Tips

You could further reduce the fat and calories by using turkey bacon and reduced fat or fat free cheese.


Directions

Whisk together the olive oil mayo, red wine vinegar and no calorie sweetener until smooth and creamy. Set aside.
In a large bowl toss together the broccoli, cauliflower, onion, cheese, and bacon.
Add dressing and combine until well coated.
Keep refrigerated.

Serving Size: makes 11 1 cup servings
