Ingredients

    Carrots
    Celery
    Onion
    Garlic
    Lentils
    Bay Leaf
    Thyme
    Salt
    Pepper
    Vegetable broth

Directions

Chop all vegetables and place all ingredients in slow cooker. Cover and cook on low for 6 hours. To thicken soup, remove 1 cup of cooked lentils and puree in food processor, stir back in soup

Serving Size: Makes 8 servings 1.5 cup size
