Introduction

A great way to use up carrots while getting your veggie fix. Helps soothe my sweet tooth. A great way to use up carrots while getting your veggie fix. Helps soothe my sweet tooth.
Number of Servings: 4

Ingredients

    3 large carrots (the kind you buy in the bulk bag
    4 packets of sweetener (I used Truvia)
    1 tablespoon pumpkin pie spice

    Optionals- cloves, raisins, apple pie spice, cinnamon, etc.

Tips

I think this would be really good with cranberries added!


Directions

Shred carrots. I use a salad shredder but a grater works fine.
Add to small pot and simmer all ingredients in enough water to cover half stirring occasionally.

If you want them crispier, reduce water and 'saute' them.
