Ingredients

    16-oz. lean ground beef (93%)
    1 medium onion, chopped
    2 c. dark red kidney beans
    2 c. yellow corn, canned
    2 c. mushrooms, canned
    2 c. diced tomatoes with green chilies, canned
    Note: I actually use the McCormick's Chili Seasoning (Reduced Sodium) packet, but I didn't see that product listed on SparkPeople...so I estimated the seasoning here.

Directions

Cook chili according to the packet directions, also adding the veggies when you would ordinarily put in the beans. Cook onion with the beef.

Serving Size: makes approximately 4 2-cup servings
