Introduction

A quick, crockpot tortilla soup! Using these staples you can add in any extra yummies that you might like... carrots, corn, jalapenos if you like it even spicier! A quick, crockpot tortilla soup! Using these staples you can add in any extra yummies that you might like... carrots, corn, jalapenos if you like it even spicier!
Number of Servings: 6

Ingredients

    1 lb boneless, skinless chicken (I prefer the tenders)
    1/2 an onion sliced or diced- your preference
    2 cups of your favorite salsa
    3-4 cups low sodium chicken broth
    1 can Eden Organics Black Soy Beans
    1 4oz can of diced green chilis
    1/4 cup frozen sweet corn

Directions

1- Put all of the ingredients into the crock pot, except for the frozen corn.
2- Cook on high heat for 3-4 hours -OR- low heat for 5-6 hours.
3- 20 minutes before you are about to eat, toss the frozen corn in. Break the chicken apart into the soup. The chicken should be tender enough to do this with a fork.
4- Enjoy! Garnish with low fat sour cream and cheese!
