Introduction

Ingredients

    1 can of black beans, drained
    .5 can of Vegetable Broth
    1 small onion diced
    3 cloves garlic minced
    1T ground cumin
    .5T ground cayenne pepper
    1t salt
    1t black pepper

Tips

Great as a side dish. Also great in a tortilla or lettuce wrap with light sour cream and salsa.


Directions

Add all ingredients to a medium sauce pan and bring to a boil. Reduce heat and simmer 10 minutes or until onion is tender. Remove from heat and mash to desired consistency using a potato masher.

Serving Size: Makes 4 - 1/3C servings

    I like this because it is simple with enough spices to make it interesting. I add 1 small can of green chilies drained and then 1 TBS lime juice at the end to brighten it up. - 9/9/12
