Ingredients

    2 c buttermilk
    2 c Grapenuts cereal (nuggets, not flakes)
    1/4 c egg substitute (= 2 eggs)
    2 t baking soda
    1 t salt
    2 c sugar
    2 c flour
    2 t baking powder
    2 c rolled oats
    1 t vanilla extract

Tips

This bread freezes well. Leave loaf whole to freeze.


Directions

Put buttermilk in bowl; add grapenuts and let stand 20 minutes. Add soda, salt, eggs, sugar, and vanilla. Add flour, baking powder and oatmeal to mixture little by little. Pour into 2 loaf pans coated with Pam, bake at 350 degrees about 45 minutes.
