Ingredients

1 tbsp. olive oil
225 grams boneless skinless chicken breast, cubed
1 med. onion, diced
3 cloves garlic, minced
4 tsp. gingerroot, minced
2 tsp curry powder
1-1/2 tsp cumin
3 cups cauliflower florets
1 can diced tomatoes, undrained
1/4 cup water (omit if using frozen cauliflower)
1/4 cup Miralce -whip calories wise dressing
Tips
Be sure to add the Miracle-whip!
Directions
Heat oil, add chicken, onions, garlic; cook 3 mins. Stirring occasionally. Stir in ginger, curry and cumin; cook and stir 1 min.
Add next 3 ingredients. Bring to a boil; simmer on medium for 10 mins. Stirring occasionally.
Remove from heat, stir in Miracle-whip until well blended.
Serving Size: 4 servings of 1 1/2 cups
