Ingredients

    1 medium cucumber, peeled
    1/2 cup wild rice
    1/2 chicken breast
    2 oz plain yogurt, low-fat
    1 tbsp dried coriander
    1 tsp ginger
    1 tsp garlic powder

Directions

Cut the cucumbers lengthwise and remove the seeds. Save the seeds.
Mix the yogurt with the garlic, ginger and coriander leaves. Add the rice, chicken and cucumber seeds. Mix well.
Fill the cucumbers with this mixture.

    Incredible!
    I loved this recipe! I Didn't have ginger or coriander, but added onion powder an dill, and used garlic and olive oil cous cous in place of rice.... either way wonderful light recipe, and it served 2!!! Thanks! - 9/24/07
