Introduction

This creamy soup tastes very decadent, but has surprisingly little fat. This creamy soup tastes very decadent, but has surprisingly little fat.
Number of Servings: 6

Ingredients

    3 cans of tomatoes in juice (14 oz cans)
    1 large onion, thinly sliced
    3 cloves of garlic, crushed
    2 TBSP butter
    2/3 cup water
    2/3 cup heavy cream
    1 tablespoon of sugar
    1/4 teaspoon crushed red pepper
    1/2 teaspoon dried oregano
    Salt and pepper to taste

Directions

Melt butter in a medium soup pot. Add the thinly sliced onion and garlic and saute for 5-7 minutes until soft. Add the rest of the ingredients and simmer for 20-30 minutes. Using an immersion blender, puree the soup. Serve with bread.
